Fall means two important things in this household; all of the munchkins are back in school and the TV is reserved for football pretty much full time on the weekends. Both these things mean our already jam-packed schedules are even more full making quick & easy dinners an absolute necessity. Of course, yummy game day food that can double as dinner is even better. I was on a mission to find some creative dinner ideas to throw into the mix and came up with two recipes that were a huge hit with Rosina Meatballs; enchilada meatballs and zoodles & meatballs. Check out the recipes below!
Sheet Pan Zoodles and Meatballs
Sheet pan dinners are definitely a go-to for me during the school week, so I knew we had to try out this recipe. I love that you just throw everything together on the sheet pan, pop it in the oven, and voila!
Total Cook Time:

What You Need:
- 2 Bags of Rosina Italian Style Meatballs
- 1 Cup of Your Favorite Marinara Sauce
- ¾ Cup of Shredded Mozzarella
- 3 Tablespoons of Freshly Grated Parmesan
- 2 12 oz Bags of Zucchini Noodles (or you can make your own with a spiralizer!)
- ¼ Cup of Basil Leaves
- 2 tbsp of Olive Oil
- 2 tbsp of garlic
- Salt & Pepper to taste
Recipe:
- Preheat the oven to 350°F
- On one half of your rimmed pan sheet, layout your meatballs and cover them in a layer of marinara sauce and shredded cheese
- Toss your zoodles with olive oil, garlic, salt, and pepper together in a bowl
- Layout the seasoned zoodles on the opposite side of the rimmed sheet pan
- Bake for 20-25 minutes
Enchilada Meatballs
Whether you are looking for a unique & easy weeknight dinner or an appetizer that will have everyone asking you for the recipe all football season long, you have to try out these enchilada meatballs.
Total Cook Time:
4 hours (although most of this time it will just be sitting in your slow cooker!)
What You Need:
- 2 Bags of Rosina Homestyle Meatballs
- 28 oz of Enchilada Sauce
- 1 Can of Your Favorite Chunky Salsa
- ¾ Cup of Shredded Cheese
- Toothpicks for Serving Appetizers
Yup, it’s that easy! You might even have all these ingredients in your house already.
Recipe:
- Add Rosina Homestyle Meatballs, enchilada sauce, and your favorite chunky salsa to your slow cooker
- Cover and cook on low for 3-4 hours
- Sprinkle cheese on top and cover for 10 minutes
- Serve!
