Today I am sharing a few recipes that are not only quick & easy but also super delicious too. This way you can whip up meals the whole family will love without exhausting yourself.

2 Delicious Meatless Meals
Several years ago we began eating meatless meals every Monday. It was a great way to incorporate some plant-forward foods into our diet, typically saving us some cash (protein is expensive), and it has been proven to be good for our health too. Here are a few of our favorites.
Cheese Ravioli Southwest Skillet
If your family loves a little heat this dish is sure to please. It is super unique featuring Celentano Cheese Ravioli but instead of the traditional Italian recipes, this skillet gets a TexMex kick that really gives your taste buds something to celebrate. Simple Basil Pesto Tortellini
This dish has graced many summer BBQs and it is always a crowd-pleaser. The best part is its super easy to whip up and serves as a great dinner when paired with a caesar salad and crusty french bread.
Ingredients:
- Celentano Pasta cheese tortellini
- jar of basil pesto
- fresh mozzarella balls
- cherry tomatoes
- Fresh basil leaves
- Parmesan shavings
Directions:
- Heat Celentano Pasta cheese tortellini by following the package instructions. Let cool to room temperature.
- Next, mix in the basil pesto to taste.
- Slice cherry tomatoes and shred fresh basil leaves then add it to the pasta along with the mozzarella balls and top with fresh parmesan.
- Pop in the fridge to chill. Serve chilled.

Meatball Recipes You Need To Try
For the other nights of the week my kiddos looooove Rosina’s Meatballs. Of course, they are delicious paired with spaghetti and marinara and make appetizing meatball subs as well. But, today I want to share some less traditional meatball recipes for you to surprise and delight your family with.
Pesto Meatball Sliders
If I really want to put a smile on my kiddos faces I whip up these mouthwatering sliders. They make a great meal when the kids have friends over as well. In fact, I haven’t found a person yet that doesn’t think these are amazing! You can grab the full recipe on Rosina Recipes here.
Sheet Pan Zoodles & Meatballs
This is Ella’s favorite meal. It’s great for those living the low-carb & keto lifestyles as well since we swapped regular noodles for zucchini noodles. Personally, I love this one because it has very little clean up thanks to the one pan cooking style too! I posted the recipe on this post here.
Enchilada Meatballs
Whether you are looking for a unique & easy weeknight dinner or an appetizer that will have everyone asking you for the recipe you have to try these enchilada meatballs. To make it a meal pair it with Mexican-style rice, pinto beans, chips, and a side salad. I posted the recipe on the blog right here.
Korean BBQ Meatballs
My kids were on a Korean BBQ kick after a trip to Hawaii where we ate daily at an amazing food truck near our fav beach. So, one day I surprised them with these Korean Meatballs- they’ve been a fav in our house ever since. These are great to take to parties because they are so unique. To serve them for dinner pair them with a few of these sides from The Pioneer Woman.
Ingredients:
- Rosina Homestyle or Turkey Meatballs
- Korean BBQ Sauce *you can use store-bought but I prefer to make my own. This recipe is my go-to.
- Green Onions
- Sesame Seeds
Directions:
Cook meatballs to package directions and top with Korean BBQ sauce. Then sprinkle with green onions and sesame seeds.
Buffalo Meatballs
Super simple and spicy for the family members that like the heat. My kiddos love pairing these with fresh-cut carrots and celery, ranch dressing, and buttered rolls.
Ingredients:
- Rosina Turkey Meatballs
- Buffalo Sauce
Directions:
Cook meatballs according to package directions and top with buffalo sauce to taste. Drizzle with ranch and sprinkle with green onions if you are feeling fancy. Serve with sliced veggies, extra ranch dressing, and buttered rolls.
