I swear each day here is more perfect than the last. It’s incredible!!! We started off the day with a delicious buffet breakfast than headed off to a parkour water aerobics class. Sounds crazy, I know, but it was totally fun AND it kicked my butt! So, win/win! Only problem is I’m not sure I will be able to find a parkour water class when I get back home- ha!
Highlights from today:
After our workout we relaxed a bit, ate a delicious lunch at Virgin Burgers where we took in incredible views of the Virgin Islands. It was such a clear day we actually could see many more tiny islands than we had ever seen before. We could also see the divide where the Atlantic Ocean meets the Caribbean Sea. It’s crazy how you can actually see the line.
Next up was snorkeling which I was a bit nervous about because I wasn’t exactly sure how choppy the water would be or how Ella would do. The last few times we have gone snorkeling with the kids it has been all work with very little actual fish being seen. Well the snorkeling gods were good to us today. The water was warm and crystal clear, there were schools of different fish and gorgeous coral. Ella begged to stay IN the water. Definitely, a shocker so that should give you some inclination to how great it was out there.
After we returned back from the boat, Ella and I headed to the spa gym because I had been dying to workout in there and I missed my workout yesterday. It felt so good to catch up on my workouts even after my parkour water aerobics and snorkeling. I have been trying to stick to my healthy lifestyle while traveling and keeping up with my workout regimen is key!
After getting our sweat on we cleaned up and met our host at the concierge because Ella had collected all the Scout About bands and was ready to get her special Hall of Fame bracelet and certificate. I really loved this activity as it kept Ella entertained and excited to explore the grounds every day. She also learned about the Puerto Rican culture and its native plants and animals along the way!
Then we headed to Blossom’s for dinner which is a Japanese Teppan style restaurant on property. Ella was lucky enough to get to try her hand at cooking with the chef tonight. She didn’t do to bad either 😉 After the Teppan chef showed off his skills we ate our meals and headed to the arcade. Ella finished up her tokens and turned in her tickets. I loved that the tickets were redeemed in a machine for prizes. It was really cool!
Of course we had to end the night on a sweet note since this is a vacation after all. So, we roasted s’mores by the fire. It was the perfect ending to a perfect day!
Where have you had the BEST snorkeling experience?
*A special thanks to El Conquistador for hosting Ella and I on our recent press trip. My thoughts and opinions, as always, are 100% my own.

Looks so fun!!! What an amazing place to snorkel ??!
It truly was!!
Adding this to my bucket list! It looks so fun.
What an incredible day!! I loved your video. The perfect song for where you are. 🙂 Unfortunately I’ve never been snorkeling, but I so want to!
Thank you Julie. You are too sweet. I hope you get the chance real soon!!
Wow! Super jealous of all your adventures!!! So far my fav place to snorkel has been Kauai, Hawaii but I’m partial to swimming with sea turtles ✌?️
Organically yours.

Yes, Hawaii is absolutely incredible. I love swimming with the sea turtles as well and had a great time in Kona when we snorkeled there just bc there were so many sea turtles swimming with us. Maui and Oahu I just haven’t found the right spots yet and I’m super scared of sharks- ha!
Looks amazing, I must admit I have tried snorkelling and scuba and have found it is not my thing. The fish just totally freak me out! haha I much prefer to look at other peoples videos and photos than actually do it myself…
That is typically me too. But, this was super calm, warm, crystal clear water and we were swimming along a private island and coral so it was totally not scary at all. BEST snorkeling I have ever done. I think you would like it!
Wow, that sounds incredible. And, I don’t even know where Mombasa is… totally going to go google in right now 😉
