I'm amber

A mom of six through birth and adoption, family travel specialist, self-proclaimed chocolate chip cookie connoisseur, Disney lover, and, I hope to be, your new best friend.

hello,

If you enjoyed my vegan chocolate oat milk recipe, you are going to LOVE my vegan chocolate cashew milk recipe! I make both with my Almond Cow Machine, but I have included instructions for how to make it without the machine as well.

When I made the decision to start incorporating more vegan recipes into our weekly meals, my eyes were opened to how many incredibly delicious foods I could make right at home with simple ingredients. I set my sights on making yummy milk alternatives (because holy cow, store-bought milk alternatives are expensive!) and quickly found out how awesome the Almond Cow Machine is.

The Almond Cow Machine

Not only are you saving money by reducing the need to purchase store-bought dairy-free milk, but it also gives you so many options to make different kinds of milk without additives.

If you are interested in owning your own Almond Cow Machine, check it out here and use code AMBER to get $25 OFF $200 or more!

Delicious Almond Cow Vegan Chocolate Cashew Milk Recipe

Below is my recipe for vegan chocolate cashew milk using the Almond Cow Machine. If you do not currently own an Almond Cow, I have also included to make cashew milk using a blender and strainer.

Chocolate Almond Milk with the Almond Cow Machine

Almond Cow Chocolate cashew milk

Ingredients:

  • 1/2 cup coconut shreds (unsweetened)
  • 2/3 cup cashew pieces
  • 3 chopped, pitted dates OR 1-2 tbsp maple syrup
  • 1-2 tsp vanilla
  • 1/4 tsp sea salt
  • 1/4 cup of monk fruit sweetener
  • 1/4 cup of unsweetened cocoa powder

Directions:

  • Fill the Almond Cow tank to the minimum water line.
  • Fill ALL ingredients inside the basket.
  • Twist back onto the blade/top and turn it on.
  • Once finished, pour into your favorite glass/jug and enjoy!

Chocolate Almond Milk with a Blender

Without the Almond Cow, you will need a blender, fine-mesh strainer or cheesecloth, and a large bowl.

Ingredients:

  • 2/3 cup cashew pieces
  • 3 chopped, pitted dates OR 1-2 tbsp maple syrup
  • 1-2 tsp vanilla
  • 1/4 tsp sea salt
  • 1/4 cup of monk fruit sweetener
  • 1/4 cup of unsweetened cocoa powder

Directions:

  • Soak the cashews overnight
  • Add the soaked cashews to your blender with 4 cups of fresh water. Blend on high speed until the mixture is very smooth, which should take about 1-2 minutes.
  • Place your strainer or cheesecloth over a large bowl. Pour the blended cashew mixture into the strainer. Use a spoon to press the mixture against the strainer and extract as much liquid as possible. If you’re using a cheesecloth, you can also squeeze it with your hands.
  • After straining the cashew milk, pour it back into the blender. Add the cocoa powder, your chosen sweetener, and optional vanilla extract and salt.
  • Blend the mixture again until smooth and fully combined.
  • Optional: Strain again if you want a smoother texture
