Spring is just around the corner- but the cool weather isn’t quite behind us yet. April showers are on the way, and there’s nothing better than a warm, toasty latte to take the edge off the lingering chill. Earth Month and Starbucks Earth Month Game and so is their latest trendy concoction.
The Starbucks Honey Oatmilk Latte is their latest viral concoction, and for good reason- the blend of steamed Oatmilk with a drizzle of honey blend and finished with a toasted honey topping is the sweet, salty combo we’ve been dreaming of.
Starbucks recently announced the nationwide availability of Oatmilk as an option to use as the (non) dairy base for any of their drinks. Besides being an excellent option for vegetarian or lactose-intolerant coffee drinkers, oatmilk also packs more protein and fiber than some milk alternatives. Plus, it tastes great when blended with rich espresso and smooth syrups.
Think of this as the drinkable version of wearing your favorite sweater, sitting down to re-read your favorite book, and listening to your favorite song, all at once! It’s just that good.
But even though it is perfectly delicious, there’s no reason to spend $5 or more for one little latte when you could easily make your own version at home! Plus, when you make a Honey Oatmilk Latte at home, you get to control the ingredients, making it super simple to customize the recipe based on your dietary restrictions or health goals. Win-win.
Replicating Starbucks’ latte recipe is easier than you might think. Their lattes always start with a base of steamed milk, which you can create by heating your milk in the microwave or on the stovetop (unless you happen to have a milk steamer, in which case- kudos to you!)
Next, the baristas combine the steamed milk with 2-3 shots of espresso (based on the size of the drink), and the flavored syrups. If you don’t have an espresso machine at home, you can brew strong, dark coffee or even brew the espresso blend in your normal coffee pot using warm water to fill the coffee maker. It won’t technically be espresso, because it isn’t made with pressure being applied to the grounds, but it will taste very similar.
The syrups Starbucks uses can’t easily be found in stores, because Starbucks uses wholesale suppliers. However, popular coffee syrup brands like Torani are easy to find at grocery stores or online and are perfectly acceptable substitutes. Though for some recipes (like this one!) you’ll need to whip up a quick simple syrup in order to truly replicate the Starbucks original.

Copycat Starbucks Honey Oatmilk Latte
This recipe is fairly straightforward- the most complex part involves creating a honey syrup, but you can make this in bulk and store it in the refrigerator to make the next day’s latte quicker! Note that normal honey cannot be substituted for the syrup, as it will not dissolve into the drink properly.
Ingredients
- ¼ cup brewed espresso or strong coffee
- 1/2 cup oatmilk (click here to choose your fave)
- 3 teaspoons honey syrup (ingredients listed below)
Honey Simple Syrup
- 1 cup pure honey
- 1 cup water
- 2 cinnamon sticks
Topping (optional)
- ½ tbsp. brown sugar
- ¼ tsp ground cinnamon
- ¼ cup oatmilk, frothed, or whipped cream
Optional tools
- Milk frother
Directions
Part One: Make the Honey Simple Syrup
Step 1: Over medium-high heat, bring the water, honey, and cinnamon sticks to a boil. Once boiling, reduce to simmer for 5 minutes.
Step 2: Remove from heat and allow to cool completely. Strain the syrup into a jar or container. Your syrup is ready to use!
Part Two: Prepare the Latte
Step 1: Heat the milk in a mug until very warm but not boiling. (Alternately, heat over the stovetop or in a milk steamer). Set aside.
Step 2: Add the espresso/coffee to the mug, followed by 3 teaspoons of the honey simple syrup. Stir to combine. Top with frothed milk or whipped cream. Combine the brown sugar and cinnamon in a small bowl or Ziploc bag. Add a sprinkle of the brown sugar/cinnamon mixture to finish. Enjoy!
Healthy Twist on the Starbucks Honey Oatmilk Latte
The oatmilk in the Honey Oatmilk Latte already makes this drink a bit healthier than lattes made with whole milk. And with only a few ingredients to begin with, there are not too many swaps to make this drink healthier. However, there is a lot of sugar in honey, so reducing the amount of honey in this drink and opting for a low-fat oatmilk trims some calories.
